When you order chouriço assado in a restaurant, your waiter brings the sausage to your table in a clay dish topped with brandy. They then ignite the brandy right in front of you. Once on the table, you can cook the chouriço to your preference. For the perfect chouriço assado, the outside of the sausage should be slightly charred and crispy.
